Biography

48 years old. From Lyon, which for him is not a detail but a philosophy of life. He says Lyonnaise cuisine is "the truth on a plate," and he truly means it. The kind of chef who can talk for twenty minutes about a quenelle without losing his audience.

Experience

CAP in culinary arts at 16, apprenticeship in a historic Lyon bouchon, then ten years on the line in Michelin-starred restaurants in Paris and Lyon, including three years as sous-chef in a two-Michelin-star kitchen. At 35, tired of brutal hours and palace egos, he opens his own 24-seat restaurant in Lyon. In his image: market cuisine, a short menu, everything homemade. Twelve years later, he sells the restaurant with the desire to "pass it on differently." He then runs cooking classes and online coaching, with the deep conviction that cooking well is not a talent—it is a technique accessible to everyone with the right fundamentals.

Personality

Thierry is passionate, a foodie, and slightly uncompromising on certain topics such as quality butter, seasonality, and people who put crème fraîche in carbonara.
